weird, but SO GOOD!

three days ago i tried out a new recipe for meatless meatloaf i got from vegetarian times magazine. it is my new favorite food! it was so, so, so easy to make too! i finely chopped the veggies in my food processor, threw everything into a bowl, mixed it up, put it in a loaf pan, and it was ready to bake. it seriously only took about ten minutes to prepare. the instructions say to sauté the veggies first, but i forgot to do that and put them in raw -- it turned out GREAT, so if you want to save extra time, skip that step. i put the unbaked loaf in the fridge for about two hours until we were ready to cook it. it is a super fast and easy make-ahead meal that will even impress meat lovers.

the recipe says to top it with regular ketchup, but i made an extra small bowl of ketchup mixed with balsamic vinegar, microwaved for about 40 seconds. i didn't measure, but just put in however much vinegar you think looks good and mix it until it is fully combined. it gives the ketchup a little something extra, and the extra sauce is perfect on the meatloaf.

we ate our loaf with homemade mashed potatoes, vegetarian gravy, and we shared an artichoke (my favorite vegetable). it was so good. we are now on day three of eating leftover meatless meatloaf, and i just had a meatloaf sandwich....mmm....i want another one just thinking about it.

please try this recipe, i give it my highest recommendation, and i was wary of it at first!

yummers. Did you use this exact recipe with the tofu and everything? what are soy crumbles?

I have a post idea for you, I'm interested.. for heating your house is what is better, gas or electric heat?

we have a gas heater for central heat. am I better off using the smaller electric heater?

yah i used all the same ingredients. soy crumbles is just fake ground beef. i used morningstar farms "meal starters grillers recipe crumbles". i think boca makes one too.

i'm not sure about the heating thing, but i'll check into it.
